Baked Parmesan Chicken Thighs is a perfect recipe for picnics!  Quick and easy to prepare, this recipe will get you rave reviews for your chicken and requests for this far too simple recipe.  You'll be baking this chicken for lunches and suppers at least once a week.

Volunteer to make the chicken for the barbecue or picnic and show up with Parmesan Chicken Thighs and you will delight a crowd!

Ingredients

  • 12 chicken thighs

  • 2 cups of flour

  • 1 cup of bread crumbs

  • 1 cup of Panko crumbs

  • 2 cups of grated Parmesan cheese

  • 1 tablespoon of paprika

  • 1 teaspoon of salt

  • 1 teaspoon of pepper

Baked Parmesan Chicken Thighs

Instructions

  1. Preheat oven to 350 degrees Fahrenheit

  2. Grease a large baking dish ( I use a small dab of lard and rub it around the entire dish)

  3. Combine all ingredients in a large mixing bowl and whisk together (not the chicken)

  4. Dredge the chicken thighs in the mixture, use a spoon to fill up all folds

  5. Place thighs in baking dish and cook for 40 minutes to 1 hour, flipping the thighs over after half way through the cooking time

  6. Serve when meat reaches an internal temperature of 165 degrees Fahrenheit/1 hour and juice runs clear
