Blackberry Ice

Beat the heat of Summer by enjoying this easy-to-make and healthy treat for you and your kids!  Blackberries are rich in anti-oxidants, fiber, vitamins C & E and help to relieve the symptoms of PMS as well as aiding in weight loss.

Blackberry Ice is refreshingly cool!

Blackberry Ice

Ingredients

  • 1 pint of blackberries(2 cups/12 oz./approx. 35 blackberries)

  • 3 cups of water

  • 1/2 cup of water

Instructions

  1. Rinse berries in colander 

  2. Add 2 cups of water and berries to a microwave safe bowl 

  3. Microwave on high for 2 minutes and then remove and stir

  4. Repeat process two more times for 1 minute each time

  5. Remove and strain berries through a sieve, removing all seeds

  6. Add the juice and pulp to a large freezer safe bowl, stir in sugar

  7. Add 1 cup of water and blend, set in the freezer overnight

  8. Next day:  Remove and using a large spoon shave scoops of ice into a glass
