Eggs Benny

This my family's favorite breakfast dish and for me it is simple, inexpensive and a total cheat recipe!  This is our traditional Christmas morning breakfast and a special treat when I make it for a Sunday brunch.  My kids rave about this recipe!

Served on elegant plates, this meal easily impresses any guest!  

Eggs Benny

Ingredients

  • Individual Servings/per person

  • 1 English muffin split, toasted and lightly buttered

  • 2 slices of oven baked Canadian or peameal bacon or 1 slice of ham to cover a muffin bottom

  • 2 large, poached eggs

  • 1 package of Hollandaise sauce...that's right, the cheating starts with the sauce...make Hollandaise sauce from scratch if you must

  • 1 green onion (stalk only) finely chopped as garnish

  • paprika

  • pepper & salt to taste

Instructions

  1. Slice and bake the bacon at 350 degrees F for approximately 10 minutes for each side

  2. Using a muffin tin to poach my eggs is a nice and quick cheat

  3. Add 2 tablespoons of water and 1 tablespoon of vinegar to each muffin cup and bake until tops are clouded over, approximately 15 minutes

  4. Following the instructions on the package, make the Hollandaise sauce and add in a pinch of paprika (I make mine in the microwave in the Pyrex 2 cup measuring cup)

  5. Split, toast and butter the English muffins

  6. Assemble all starting with the muffin then the bacon, egg, pour on the sauce and garnish
