Gramma's Shepherd's Pie
Gramma's Shepherd's Pie is Rob's favorite comfort food. It's a simple, inexpensive ground beef or "mince" recipe that can feed a crew. Serve as a meal along with fresh rolls and icy cold glasses of milk.
Traditional recipes call for just the browned beef and the mashed potatoes but you can add corn, carrots or onions to "beef up" this simple dish. My mother makes a very different version of this recipe.
Ingredients

1 pound of lean ground beef

1 teaspoon of lard
-
1 small onion, diced

1 cup of frozen corn
-
8-12 Russet potatoes, boiled then mashed

1/4 cup of milk
-
butter, 1/3 cup, melted
-
parsley to garnish
Instructions
-
dice and saute onions in a skillet on the stove top at medium heat
-
add ground beef to the skillet and brown
-
add frozen corn to the skillet and mix together, cook until corn is soft/thawed out
-
peel, boil and mash potatoes and milk together
-
add skillet contents to a casserole dish and spread mashed potatoes over top
-
lightly brush butter across the top of the mashed potatoes
-
using a fork make horizontal and vertical lines on top of the mashed topping
-
garnish with parsley and serve
Gail's Shepherd's Pie
My mom's version of Shepherd's Pie is one of my favorite "cheat" meals. I have also added her recipe, below. Enjoy!
Ingredients

1 pound of lean ground beef
-
14 oz can of cream style corn
-
14 oz can of peas
-
19 oz can of stewed tomatoes, crushed
-
1 box of frozen pie shells, 320 grams, 2 shells
-
salt & pepper to taste
Instructions
-
cook ground beef in a skillet on the stove top at medium heat until browned
-
fork first pie shell, stabbing all around the bottom shell (leave in it's tin)
-
add the browned ground beef to the pie shell
-
add in the cream style corn and the peas
-
crush and drain the tomatoes reserving only 1/3 of the liquid to add to the pie along with the tomatoes
-
salt and pepper, to taste
-
top with second pie shell and press edges together, flute edges all around the shells and score the crust on top in the centre with an "X"
-
place on a baking sheet and into the oven at 350 degrees Fahrenheit until the pie shell is nicely browned and juices are bubbling up though the "X"
