Red Grape Applesauce Muffins
This recipe was a surprise for me. I had some unsweetened applesauce and seedless red grapes on hand that I wanted to use up so I invented this recipe.
I am delighted they turned out to be the BEST MUFFINS that I have ever made! The recipe could easily be used for a cake as well. These muffins are so sweet that they qualify as a dessert on their own!
Ingredients

Makes 1 dozen muffins

1 1/2 cups of all-purpose flour

1 1/2 teaspoons of baking powder

1/4 teaspoon of salt

8 tablespoons of salted butter, softened

2/3 cup of brown sugar

2 large eggs
-
3/4 cup of unsweetened applesauce

1 cup of seedless red grapes
-
12 pinches of granulated sugar
Instructions

Preheat oven to 350 degrees F

Whisk together flour, baking powder and salt

In a separate mixing bowl blend together, using an electric mixer, the butter, brown sugar, eggs and applesauce

Combine the dry and wet ingredients, continue blending until you have a smooth batter

Add the grapes and stir them into the batter

Drop the batter into the 12 muffin cups and top each with a pinch of sugar

Bake for 16 minutes to 18 minutes and serve warm or refrigerate
