Breakfast Scramble

A quick-to-prepare breakfast meal that is versatile. Spiced up to suit your family's tastes.  A weekend favorite in our home.  Add in your favorite vegetables in place of the peppers and mushrooms.

These can also be wrapped up for lunch sandwiches and served cold.  Very flavorful!

Breakfast Scramble

Ingredients

  • Yields Four Servings

  • 6 large grade A eggs

  • 2 large Italian Sausages

  • 1 green pepper & 1 red pepper

  • 8 white mushrooms

  • 4 ciabatta buns

  • 4 tsp of butter

  • 1/4 tsp each of salt, pepper, garlic powder, cayenne flakes

  • salsa 

  • fresh cilantro or parsley

Instructions

  1. Add milk, eggs and spices to a large mixing bowl and whisk together

  2. Pour mixture into a skillet on low heat

  3. Using a spatula, stir and scrape and turn mixture until partially cooked 

  4. Add in thin sliced mushrooms and peppers and cook all on low to medium heat for 3-5 minutes 

  5. Remove sausage from casing and add it to a small frying pan to cook through approx 10-15 minutes

  6. Combine meat and egg scramble and add to lightly toasted ciabatta buns

  7. Top each with a tbsp of salsa 

  8. Garnish with fresh cilantro or parsley
