Strawberry-Cinnamon Tortillas

Ingredients

4 large 10" tortillas

1 egg

1 cup of milk

3 cups of fresh strawberries

1 tablespoon of vegetable oil/cooking spray

3 tablespoons of cinnamon

3 tablespoons of sugar

whipped cream

pure Canadian Maple Syrup

Instructions

Preheat oven to 350 degrees F and grease/oil/spray a glass casserole dish

Add 1 egg, 1 cup of milk, 3 tablespoons of cinnamon and 3 tablespoons of sugar to a large mixing bowl and whisk together

Place 4 10" tortillas into the egg-milk mixture and thoroughly soak each tortilla

Place greased casserole dish into the oven for 5 minutes

Wash and thin cut 3 cups of strawberries

Place each tortilla on a plate and place 3/4 cup of strawberries in the centre of each and roll up, leaving ends open

Add strawberry stuffed tortillas to casserole dish and pour milk-egg mixture over top, sprinkle a bit of cinnamon on each

Place tortillas in oven for 20-30 minutes, they should be starting to just crisp up at the edges

Plate each tortilla, drizzle pure Canadian maple syrup over the tortilla and top with whipped cream
