Strawberry-Cinnamon Tortillas

The sweetest breakfast delight! Strawberry-Cinnamon Breakfast Tortillas are going to rock your sweet tooth.  Delicious, fresh strawberries stuffed into a tortilla, coated with cinnamon, topped with whipped cream and drizzled with pure Canadian maple syrup.

Yes, you can have dessert for breakfast!

Mom's Breakfast Muffins

Ingredients

  • serves 4 people

  • 4 large 10" tortillas

  • 1 egg

  • 1 cup of milk

  • 3 cups of fresh strawberries

  • 1 tablespoon of vegetable oil/cooking spray

  • 3 tablespoons of cinnamon

  • 3 tablespoons of sugar

  • whipped cream

  • pure Canadian Maple Syrup

Instructions

  1. Preheat oven to 350 degrees F and grease/oil/spray a glass casserole dish

  2. Add 1 egg, 1 cup of milk, 3 tablespoons of cinnamon and 3 tablespoons of sugar to a large mixing bowl and whisk together

  3. Place 4 10" tortillas into the egg-milk mixture and thoroughly soak each tortilla

  4. Place greased casserole dish into the oven for 5 minutes

  5. Wash and thin cut 3 cups of strawberries

  6. Place each tortilla on a plate and place 3/4 cup of strawberries in the centre of each and roll up, leaving ends open

  7. Add strawberry stuffed tortillas to casserole dish and pour milk-egg mixture over top, sprinkle a bit of cinnamon on each

  8. Place tortillas in oven for 20-30 minutes, they should be starting to just crisp up at the edges

  9. Plate each tortilla, drizzle pure Canadian maple syrup over the tortilla and top with whipped cream
