Turkey Salad Sandwiches

I love leftover turkey!  My favorite thing to eat after a turkey supper is good old fashioned turkey salad sandwiches.  

You can get as fancy as you want with this recipe by adding in chopped celery, lettuce, tomatoes, crushed cashews or whatever you can dream up! The best way to jazz up the recipe is to use a bread like pumpernickel or rye bread or gut and stuff a french bread stick with the turkey mixture then cut slices off diagonally and serve.    

Turkey Salad Sandwiches

Ingredients

  • Recipe makes four sandwiches or filling for a french bread stick

  • 2 cups of shredded turkey meat (preferably breast meat)

  • 3 tbsp of Hellman's Mayonnaise

  • 1 tsp each of Salt & Pepper

  • ​1 tsp of lemon juice 

Instructions 

  1. Shred 2 cups of turkey breast in a mixing bowl  

  2. Blend in 3 tbsp of mayonnaise

  3. Salt & Pepper, to taste

  4. Add 1 tsp of lemon juice or squeeze a fresh lemon over the mixture and stir

  5. Spread mixture on bread, toast or stuff a loaf of bread 

  6. Refrigerate or serve immediately
