If you want a lasagna-style meal without the same amount of hassle then this dish is a great substitute.  A perfect dish for a vegetarian.  Simply substitute meat ravioli with cheese ravioli.  This recipe is made with zucchini but any fresh vegetable would work.

Ravioli Alfredo Casserole

Cheese lovers will be very satisfied with this casserole, even if they use low-sodium mozzarella.

Ingredients

  • 500 grams of frozen ravioli

  • 1 jar (410 ml) of Alfredo sauce

  • 200 grams of mozzarella cheese (low sodium)

  • 2 small zucchinis

  • 1/2 cup of Parmesan cheese

  • Pepper to taste, top with scallion greens

Raviolo Alfredo Casserole

Instructions 

  1. preheat oven to 400 degrees Fahrenheit

  2. spread half of the Alfredo sauce on the bottom of a casserole dish

  3. cover sauce with shredded zucchini (all 2)

  4. add first layer of frozen ravioli (half)

  5. cover ravioli with half of the mozzarella cheese

  6. layer on the second half of your ravioli

  7. spread the rest of the Alfredo sauce on the ravioli

  8. cover the sauce with the rest of the mozzarella cheese

  9. evenly sprinkle the Parmesan cheese on the top

  10. pepper to taste, top with scallion greens

  11. bake, covered, for 45 minutes, serve with water and French or Italian bread
